Smooth and tangy—just like a classic Hellm***'s Mayo

When I first started a ketogenic, low-carb diet, I was so pleased that I could still eat mayo—I absolutely love the stuff. But when I found out about the downsides of seed oils, I wanted to cry. In fact, I probably did cry - I didn't want to give up mayo as well!

So, I went on a mission to delve into the world of seed-oil free mayos. When I discovered mayos made with avocado oil, sadly I found that they didn't always taste great. It wasn't until I found a naturally filtered Light Avocado Oil (Spanish, no less!), that's perfectly smooth and neutral in taste, that I felt confident I could crack the ultimate 'seed oil free' mayonnaise. I simply made a mayo the way I had learned as a trainee chef (back in 90s); eggs, a good quality and light tasting oil, dijon mustard, vinegar, a squeeze of lemon juice and seaoned to taste. Simple really - it's all about the ingredients.

What you end up with, is a totally seed oil-free mayo, thats super smooth, rich and tangy, crafted to taste, just like the queen of mayo - Helm**ns (or better?!). Perfect for squeezing onto your burgers or mixing with shredded veggies for a banging slaw, or any time you simply want that classic mayo flavour.
