Warm Cobb Salad with French Dressing

Golden, crisp, and packed with flavour, this warm cobb salad is the ultimate low-carb comfort dish. Charred baby gem, crispy streaky bacon, and tender pulled rotisserie butter chicken come together in perfect harmony. Topped with a creamy soft-boiled egg, buttery avocado, tangy gorgonzola, and fresh baby watercress, then finished with a drizzle of fu:di French Dressing—simply delicious 


Ingredients

  • 1 baby gem
  • 5 streaky bacon rashers
  • 150–200g cooked chicken (rotisserie, roast thighs, or shredded breast – enough for 2 people)
  • 1 handful baby watercress
  • 2 large eggs
  • ½ avocado
  • 100g cherry tomatoes
  • 40g gorgonzola (plus extra to finish)
  • GOOD PHATS Light Avocado Oil Spray
  • Sea salt & cracked black pepper
  • 2–3 tbsp fu:di French Dressing

Let's begin!

Roast & crisp! 

Step 1

Preheat your air fryer to 200°C. 

Quarter the baby gem. Place it in the air fryer basket and lay the streaky bacon rashers over the top—this lets the lettuce soak up that lovely salty bacon flavour as it cooks. Spray lightly with GOOD PHATS and season with a little sea salt.  

Air-fry for 6 minutes, shaking halfway through. Remove when the bacon is crisp and the baby gem is golden and charred at the edges. 

Perfectly Soft-Boil the Egg! 

Step 2

Bring a small saucepan of water to the boil. Lower in the eggs and cook for 6 minutes for a soft, creamy yolk. Cool in an ice bath, peel, and set aside. 


Assemble & Serve! 

Step 3

Slice the avocado and halve the cherry tomatoes. 

On a large serving plate—or two individual plates—layer up the baby watercress and roasted baby gem. Break up the crispy bacon and scatter over, followed by the shredded chicken. 

Top with avocado slices, cherry tomatoes and crumble over the gorgonzola. Half the soft-boiled eggs and add on top. Drizzle with fu:di French Dressing and finish with cracked black pepper and a final sprinkle of sea salt. 


Chef's Tip

For extra zing, grate fresh lemon zest over the salad before serving. 🍋 

Best served warm, straight from the air fryer. Enjoy! 😋
