All the best bits about a BLT, plus juicy poached chicken leg folded through chive mayo and salad cream, without the post-carb slump! Sandwiched between our High Protein Seeded Loaf, wrapped like a tidy parcel for grab-and-go perfection.
Ingredients
- 4 slices fu:di High Protein Seeded Loaf
- Handful of poached chicken leg meat, shredded
- 8 rashers of streaky bacon
- 4 slices of tomato
- A few baby gem leaves, sliced thinly
- 2-3 tbsp of fu:di Slightly Posh Mayo
- 1-2 tbsp of fu:di Salad Cream
- 1 tbsp of chives, finely chopped
- Sea salt & cracked black pepper
- Butter (for spreading on bread)
Let's Begin!
Step 1 - Fry the Bacon
Step 2 - Make the Chicken Chive Mayo
Add shredded poached chicken to a bowl. Chop chives and add in. Fold through a good dollop of fu:di Salad Cream and a dollop of fu:di Posh Mayo. Season with sea salt and cracked black pepper and mix to coat.
Step 3 - Slice the Tomato
Cut 4 neat slices and lightly season with a pinch of salt.
Step 4 - Build the Sandwich
Lightly butter our fu:di bread, then layer in this order: sliced tomato, chicken mayo mix, cooked bacon, sliced baby gem. Top with the second slice of bread.
Serve!
Step 5 - Meal Prep
Wrap each sandwich snugly in parchment, making a neat parcel, then slice in half. Place into a glass meal prep container, pop the lid on, and label.
Chef’s Tip!
Add a squeeze of lemon to the chicken mix for brightness, or a crack of black pepper just before wrapping for extra zing 🍋
