Pomodoro alla Norma Pasta Sauce

Tomato Passata (47%), Fried Aubergine (20%) (Aubergine, Extra Virgin Olive Oil), Fresh Sicilian Tomatoes (14%), Onion, Extra Virgin Olive Oil (5%), Chicory Root Fibre, Sicilian Sea Salt, Acidity Regulator: Citric Acid; Basil (<1%), Oregano, Chilli.

Storage: Store in a cool, dry place away from light and heat. Once opened, store in the fridge and consume within 5 days.

When we were cooking in our Italian kitchen in Sicily (yes, it’s a tough job, but someone has to do it!!), we couldn’t help but develop one of the most quintessentially Sicilian pasta sauces, Pomodoro alla Norma.

We didn’t cut any corners with this classic - we made it the proper way, with no added sugar and no seed oils, just wholesome ingredients for the real taste of Sicily.

Fresh Sicilian aubergines are gently fried in small batches (wait for it… in extra virgin olive oil, of course) for that proper authentic Italian taste. We fold them into a classic tomato base with onions, garlic and fresh Sicilian tomatoes, all perfectly seasoned with herbs and a good pinch of sea salt.

Try it with our silky High Protein Tagliatelle and finish with salted ricotta for the true Alla Norma moment, or simply add a generous sprinkle of aged Parmesan (a favourite in my family). Perfetto!
