Charred Baby Gem, Roasted Asparagus & Bacon Salad with Dorset Dressing

Crispy, golden, and bursting with flavour, this low-carb, air-fried salad is the perfect mix of charred baby gem, smoky pancetta, roasted asparagus, and crunchy croutons. Tossed with creamy, herby Dorset Dressing and topped with a jammy egg, parmesan shavings, and a sprinkle of smoked almonds. This dish is a quick, effortless way to impress—whether it’s for a weeknight dinner or a last-minute lunch with friends! 


Ingredients

  • 1 baby gem
  • 70g pancetta or lardons
  • 125g asparagus
  • 1 large egg
  • fu:di Bread Roll
  • GOOD PHATS Light Avocado Oil Spray
  • 1 handful almonds (we used smoked almonds!)
  • Parmesan, for shaving (plus extra to finish)
  • Sea salt & cracked black pepper
  • 2–3 tbsp fu:di Dorset Dressing 

Let's begin!

Prep and roast! 

Step 1

Preheat your air fryer to 200°C. 

Quarter the baby gem lengthways. Trim the woody ends off the asparagus. Tear the fu:di Bread Roll into chunks. 

Step 2

Place the baby gem, asparagus, pancetta or lardons, and bread chunks into the air fryer basket. Spray lightly with light avocado oil and season with sea salt. Air-fry for 6 minutes, shaking halfway through. Remove when golden and crisp. 


Perfectly Soft-Boil the Egg! 

Step 3

Whilst the veg and bread is in the airfryer, add a small saucepan of water to a boil. Gently lower in the egg and cook for 6 minutes for a soft, jammy yolk. Transfer to an ice bath, peel, and set aside. 

Assemble & Serve! 

Step 4

Roughly chop the smoked almonds. 

Arrange the roasted baby gem and asparagus on a plate. Top with pancetta, fu:di croutons, and chopped almonds.  

Halve the soft-boiled egg and place on top. Add Parmesan shavings, drizzle over fu:di Dorset Dressing, and finish with cracked black pepper and a pinch of sea salt. 


Chef's Tip

This dish is best served warm, straight from the air fryer. Pair it with a crisp, dry, keto-friendly white wine for the ultimate experience! 

For extra zest, grate fresh lemon zest over the salad before serving. 
Want more protein? Add grilled chicken or salmon for a complete meal. 
Love crunch? Double up on fu:di Bread Roll croutons for extra texture.
