Fresh, vibrant and packed with flavour, these Thai-inspired Napa cabbage cups are loaded with pulled roast chicken, crunchy vegetables, fragrant herbs and a punchy lime dressing. Made using the remaining roast chicken breast and some of the dark meat from our whole air-fried chicken, while reserving a little of the dark meat for our fu:di Tandoori Chicken Crispbreads, this is the second recipe in our One Chicken, Three Meals series.Ā

Remaining roast chicken breast and some pulled dark meat from the whole air-fried chicken (reserve a small handful of dark meat for the fu:di Tandoori Chicken Crispbreads)

1 small Napa cabbageĀ

20g toasted cashews, roughly choppedĀ

Step 1 - Prepare the Napa CabbageĀ
Carefully remove the larger outer leaves from the Napa cabbage, keeping them whole to use as the cabbage cups.Ā
Finely slice the remaining cabbage leaves and transfer to a large mixing bowl.Ā
Step 2 - Make the DressingĀ
Whisk together the lime juice, fish sauce, monk fruit sweetener, chopped chilli, fu:di Light Avocado Oil, microplaned ginger and garlic until well combined.Ā
Step 3 - Prepare the FillingĀ
Place the remaining roast chicken breast and some of the pulled dark meat into a bowl, reserving a small handful of dark meat for the final recipe in the One Chicken, Three Mealsseries.Ā
Pour over half of the dressing and gently toss until evenly coated.Ā
Add the sliced Napa cabbage, carrot, radishes, cucumber, toasted cashews, coriander, mint and Thai basil to the mixing bowl.Ā
Pour over the remaining dressing and toss until the vegetables and herbs are lightly coated.Ā
Step 4 - AssembleĀ
Fill each Napa cabbage leaf with the dressed salad.Ā
Top generously with the dressed pulled chicken.Ā
Finish with a generous drizzle of fu:di Sriracha Sauce and serve with lime wedges.Ā

Serve immediately while the salad is crisp and vibrant. Perfect as a light lunch or summer dinner packed with fresh herbs, crunchy vegetables and punchy Thai flavours.Ā
