Grilled Courgette, Lemon Ricotta & Parsley topped Norwegian Crispbreads

Light, creamy, and packed with fresh Mediterranean flavours! Crunchy seeded crispbread is topped with whipped ricotta, seasoned with lemon for a bright, zesty base, and layered with smoky grilled courgette. A sprinkle of fresh parsley adds the perfect finishing touch for a delicious, balanced bite. Enjoy as a light lunch with a dressed salad or as a satisfying snack when you have a little extra time to treat yourself.


Ingredients

  • 4 fu:di Norwegian Crispbreads 
  • 120g Italian ricotta cheese (around 8 tbsp)
  • 1 small courgette
  • GOOD PHATS extra virgin olive oil
  • 1 lemon
  • A bunch of flat leaf parsley
  • Sea salt & cracked black pepper, to taste

Let's Begin!

Grill the courgette

Step 1

Heat a chargrill pan over a high heat until piping hot. Using a mandolin, thinly slice the courgette lengthways into ribbons. If you don’t have a mandolin, a vegetable peeler works just as well. Lightly coat the courgette slices in Extra Virgin Olive Oil and season with salt and pepper. Grill on both sides until grill lines appear and they’re charred and tender. Repeat until you’ve grilled all the ribbons. Set aside.

Prepare the Lemon Ricotta

Step 2

In a bowl, lightly season the ricotta with a pinch of sea salt, cracked black pepper, a few rasps of lemon zest, and a good squeeze of fresh lemon juice. Finely chop the flat-leaf parsley and stir it into the ricotta. Whisk until smooth and well combined.

Assemble!

Step 3

Spread a thick layer of the whipped lemon ricotta over each crispbread.

Top & Serve!

Step 4

Lay the grilled courgette slices neatly on top. Finish with a few extra rasps of lemon zest and a few more parsley leaves.


Chef's Tip!

Want a little extra crunch? Sprinkle over some toasted pine nuts or flaked almonds for added texture.
