A low-carb twist on an American classic, done the fu:di way. Crisp lettuce, smoky bacon, creamy avocado, jammy eggs, and tender chicken, all topped off with a punch of blue cheese and the bright, herby zing of our French Dressing. It’s fresh, satisfying, and the perfect addition to your spring or summer menu!
Ingredients
- 2 large eggs
- 8 rashers streaky bacon
- 2 cooked chicken breasts
- 1 avocado
- Large handful of cherry tomatoes
- A good drizzle of French dressing
- 1-2 little gem or romaine lettuce
- 60g blue cheese (or goat’s cheese if preferred)
- Sea salt & cracked black pepper, to taste
Optional fu:di extras:
- fu:di Crispbread crumbs - for a savoury, low-carb crouton swap
Let's Begin!
Cook the Bacon & Eggs
Step 1
Place the bacon rashers in a hot non-stick pan and fry until crisp. Transfer to kitchen paper to cool, then chop into bite-size pieces.
Meanwhile, bring a small saucepan of water to a boil. Gently lower in the eggs and cook for roughly 7 mins for a jammy yolk. Transfer to an ice bath, peel, and cut into halves or quarters.
Prep the Base

Wash and roughly chop the lettuce. Place in a large mixing bowl or spread over a wide serving platter.
Build the Salad
Step 3
Slice the chicken breasts, halve the cherry tomatoes, and slice or dice the avocado.
Arrange the chicken, avocado, cherry tomatoes, eggs, and bacon over the lettuce.
Crumble the blue cheese over the top, then drizzle generously with fu:di French Dressing. Season with cracked black pepper and a pinch of sea salt.
Serve!
Best served immediately while the bacon is warm and the lettuce is crisp. Add fu:di Crispbread crumbs for a crunchy fu:di twist, if using.
