Caldesi’s Bruschetta

Most Italians are pretty passionate about the way to say “bruschetta”. If you say “brooskettayou’ll be fine!

Head Chef Gino Borella reckons this recipe was the secret of the success of San Lorenzo restaurant in Knightsbridge. He says it makes everything taste so good, it was used not only on toasted bread to make bruschetta but added to chicken, fish and pasta recipes – even to a wild boar dish. It goes without saying that good tomatoes are vital. In Italy, Gino uses a mixture of San Marzano and Cuore di Bue but when we’re in the UK we seek out Sicilian tomatoes or, better still, our own home-grown ones at the right time of year.  


Ingredients

  • 250g tomatoes (around 4 tomatoes), the best quality you can find
  • Pinch of salt
  • 6 large basil leaves or 3 large sprigs, roughly chopped
  • 1 large sprig of fresh thyme or 1 heaped teaspoon leaves stripped from the stems  
  • 3 tablespoons extra virgin olive oil
  • 1 heaped tablespoon roughly chopped flat-leaf parsley
  • 1/2 red chilli, roughly chopped, including seeds (optional)
  • 2 fu:di High Protein, Low Carb Rolls 
  • 1 garlic clove, peeled, crushed and inside green shoot removed 

Method

Step 1 - Wash and half the tomatoes removing the coarse green cores. Chop the tomatoes roughly into 1–2cm cubes and put into a medium bowl.

Step 2 - Mix the rest of the topping ingredients in with the tomatoes using a large spoon. Take care not to over-mix and turn them into a pulp. Season to taste; I cannot emphasize this enough as I am unable to tell how hot your chillies will be or how tasty your tomatoes will be, so don’t be afraid to add more thyme, chilli and salt to achieve a full-flavoured result. 

Step3 - Cut the rolls into 3 pieces, about 2cm thick pieces, and toast or grill both sides of the sliced rolls. Lightly rub the toasted surface with the clove of garlic.  

Step 4 - To serve, top with the tomato mixture for bruschetta. You can also use the topping for many other dishes. Try it with added mozzarella and extra basil over roasted vegetables or with grilled fish or chicken.
