Everything you love about a cheeseburger, pressed into a golden crispy toastie. Juicy smashed burgers, smoky cheese, sweet caramelised onions, tangy burger sauce, tomatoes and pickles layered between buttery fu:di bread and toasted until molten and irresistible.
Ingredients
Burger sauce
- 2 tbsp fu:di Posh Mayo
- 1 tbsp fu:di Ketchup
- 1 tbsp finely chopped pickles
- 1 tsp pickle juice
- ¼ tsp sweet smoked paprika
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 1 tsp fu:di American Mustard
- Small pinch fresh dill, finely chopped
- Small pinch fresh chives, finely chopped
Caramelised onions
- 1 tbsp ghee
- 1 onion, thinly sliced
Burgers
- 4 pre-smashed beef burgers
- Sea salt
- Black pepper
Toasties
- 4 slices fu:di bread
- Butter, softened
- 4 slices smoked cheese
- 1 tomato, sliced
- Pickles, sliced
Step 1 - Make the burger sauce
Add the fu:di Posh Mayo, fu:di Ketchup, chopped pickles, pickle juice, smoked paprika, garlic powder, onion powder, fu:di American Mustard, dill and chives to a bowl.
Mix thoroughly and set aside.
Step 2 - Caramelise the onions
Heat the ghee in a frying pan over a medium-low heat.
Add the sliced onions and cook gently for 15–20 minutes, stirring occasionally, until soft, sweet and golden.
Set aside.
Step 3 - Cook the burgers
Place the pre-smashed burgers onto a hot flat-top, griddle or frying pan.
Season with sea salt and black pepper and cook until deeply caramelised on both sides and cooked through.
Step 4 - Build the toasties
Butter one side of each slice of fu:di bread.
Place two slices onto a board with the buttered side facing down.
Layer over the smoked cheese followed by the caramelised onions.
Add one smashed burger, a spoonful of burger sauce, sliced tomato and sliced pickles.
Top with the second smashed burger.
Add the remaining caramelised onions and finish with the smoked cheese.
Place the remaining bread on top with the buttered side facing upwards.
Step 5 - Cook the toasties
Cook in a sandwich toaster over a low to medium heat until deeply golden and crisp and the cheese has fully melted.
Allow to rest for 1 minute before slicing.
To serve
Slice in half and serve immediately while the cheese is molten and the bread is crisp. Perfect with fu:di Summer Cheese Coleslaw Salad, fu:di Peruvian Slaw or a simple green salad.
Chef’s Tip
Make the burger sauce first and let it sit while you cook everything else. The extra time allows the flavours to meld together and gives a much more authentic burger sauce flavour. To reduce the carbs more, skip the caramalised onions.
