Creamy tarragon chicken, smoky streaky bacon, juicy tomatoes and layers of melted cheese pressed between golden buttery bread. Rich, indulgent and packed with flavour, this is comfort food done the fu:di way.
Ingredients
Chicken mayo filling
- 200g cooked chicken, shredded or chopped
- 2 tbsp fu:di Posh Mayo
- 1 tbsp fu:di Salad Cream
- Pinch garlic powder
- ½ tsp onion powder
- Small squeeze fu:di American Mustard
- Good pinch fresh tarragon, finely chopped
- Small handful fresh chives, finely chopped
- Sea salt
- Black pepper
Toasties
- 4 slices fu:di bread
- Butter, softened
- 4 slices Jarlsberg cheese
- 4 slices smoked cheese
- 8 rashers streaky bacon, cooked until crisp
- 1 large tomato, sliced
Step 1 - Make the chicken filling
Add the chicken to a bowl along with the garlic powder, onion powder, fu:di American Mustard, tarragon and chives.
Add the fu:di Posh Mayo and fu:di Salad Cream.
Season with sea salt and black pepper and mix until creamy and evenly combined.
Step 2 - Prepare the bread
Butter one side of each slice of fu:di bread.
Place two slices onto a board with the buttered side facing down.
Step 3 - Build the toasties
Layer over the Jarlsberg cheese followed by the smoked cheese.
Add the cooked streaky bacon and a layer of sliced tomato.
Divide the chicken mayo mixture evenly between the toasties.
Top with another layer of sliced tomato and the remaining bacon.
Finish with the remaining Jarlsberg and smoked cheese.
Place the remaining slices of bread on top with the buttered side facing upwards.
Step 4 - Cook the toasties
Cook in a sandwich toaster over a low to medium heat for 8–10 minutes until the bread is deeply golden and crisp and the cheese has fully melted.
Allow to rest for 1 minute before slicing.
To serve
Slice in half and serve immediately while the cheese is molten and the bread is crisp. Perfect with fu:di Summer Cheese Coleslaw Salad, fu:di Peruvian Slaw or a simple green salad.
Chef’s Tip
Want your cheese a bit more gooey – pop it in a 180 degree oven for 2 minutes once the bread is toasted.
