Creamy tarragon chicken, smoky streaky bacon, juicy tomatoes and layers of melted cheese pressed between golden buttery bread. Rich, indulgent and packed with flavour, this is comfort food done the fu:di way.Ā
Ingredients
Chicken mayo filling
- 200g cooked chicken, shredded or chopped
- 2 tbspĀ fu:di Posh Mayo
- 1 tbspĀ fu:di Salad Cream
- Pinch garlic powder
- ½ tsp onion powder
- Small squeezeĀ fu:di American Mustard
- Good pinch fresh tarragon, finely chopped
- Small handful fresh chives, finely chopped
- Sea salt
- Black pepperĀ
Toasties
- 4 slicesĀ fu:di bread
- Butter, softened
- 4 slices Jarlsberg cheese
- 4 slices smoked cheese
- 8 rashers streaky bacon, cooked until crisp
- 1 large tomato, slicedĀ
Step 1 - Make the chicken fillingĀ
Add the chicken to a bowl along with the garlic powder, onion powder, fu:di American Mustard, tarragon and chives.Ā
Add the fu:di Posh Mayo and fu:di Salad Cream.Ā
Season with sea salt and black pepper and mix until creamy and evenly combined.Ā
Step 2 - Prepare the breadĀ
Butter one side of each slice of fu:di bread.Ā
Place two slices onto a board with the buttered side facing down.
Step 3 - Build the toastiesĀ
Layer over the Jarlsberg cheese followed by the smoked cheese.Ā
Add the cooked streaky bacon and a layer of sliced tomato.Ā
Divide the chicken mayo mixture evenly between the toasties.Ā
Top with another layer of sliced tomato and the remaining bacon.Ā
Finish with the remaining Jarlsberg and smoked cheese.Ā
Place the remaining slices of bread on top with the buttered side facing upwards.Ā
Step 4 - Cook the toastiesĀ
Cook in a sandwich toaster over a low to medium heat for 8ā10 minutes until the bread is deeply golden and crisp and the cheese has fully melted.Ā
Allow to rest for 1 minute before slicing.Ā
To serveĀ
Slice in half and serveĀ immediately while the cheese is molten and the bread is crisp. Perfect with fu:di Summer Cheese Coleslaw Salad, fu:di Peruvian Slaw or a simple green salad.Ā
